Jambalaya Shrimp And Rice Recipe
Jambalaya seems to me to be one of those dishes you can "tinker" with. So have fun with the meat variations. Omit and add at will and simply Enjoy!

Ingredients
  • 4 slices of bacon, diced
  • 1 medium onion, minced
  • 1/2 medium green pepper, diced
  • 2 c. chicken bouillon
  • 1/2 c. organic ketchup
  • 2 T. organic brown sugar
  • 1 - 10 oz. package of cooked, shelled, deveined and tails removed shrimp(thaw before using)
  • 1 c. finely diced ham
  • 2 T. cornstarch
  • 3 T. cold water
  • Salt & pepper to taste
  • Hot, cooked, organic rice

Directions
  1. In a large skillet, cook bacon until crisp.
  2. Remove from pan
  3. Cook onion and pepper in bacon fat for 5 minutes
  4. Add next 3 ingredients
  5. Simmer covered for 15 minutes
  6. Cut shrimp into pieces and add to skillet
  7. Add ham mixture and heat well
  8. Thicken with blended cornstarch and water; season with salt and pepper to taste
  9. Serve over hot rice
