Irenes Taco Chicken Recipe

Ingredients

1 lb. chicken breast cut in chunks or strips

canola oil

1 package Taco seasoning

14.5 oz can diced tomatoes

1/4 c. honey (use a little less if you don't like it too sweet)

1/8 tsp. cayenne pepper (less if you don't like it too hot)

4 c. cooked instant rice ( I use regular cooked rice)

Topping:

Shredded cheddar cheese

Sour Cream

Directions

Saute chicken strips jn a little oil in frying pan or electric skillet.

Combine with all the rest of the ingredients except the rice and topping.

Bring to a full boil.

Reduce heat

Cover and simmer for 10 minutes or till chicken is done.

Serve over hot rice.

Top with cheddar cheese and sour cream if desired.
