Curried Rice Pilaf

- 1 tbsp butter shopping list
- 1 c uncooked long grain rice shopping list
- 1 tbsp olive oil shopping list
- 1 onion, diced shopping list
- 1 stalk celery, sliced shopping list
- 1 tbsp curry powder shopping list
- 1 3/4 c chicken broth shopping list
- 1/2 tsp pepper shopping list
- 1/2 tsp salt shopping list
- 1/2 c raisins shopping list
- 1/2 c pecans, chopped shopping list
How to make it
- In a large saucepan melt the butter then add the rice and cook for about 5 minutes or until browned. Remove and set aside.
- In the same pan heat the olive oil then add the onion, celery, and curry powder and cook for about 5-10 minutes or until veggies are softened.
- Stir the rice back in and add the chicken broth, salt and pepper. Bring to a boil.
- Lower the heat and simmer for about 20 minutes or until rice absords liquid.
- Stir the raisins and pecans in and cook until heated through.
