How to make it

  • In a large saucepan melt the butter then add the rice and cook for about 5 minutes or until browned. Remove and set aside.
  • In the same pan heat the olive oil then add the onion, celery, and curry powder and cook for about 5-10 minutes or until veggies are softened.
  • Stir the rice back in and add the chicken broth, salt and pepper. Bring to a boil.
  • Lower the heat and simmer for about 20 minutes or until rice absords liquid.
  • Stir the raisins and pecans in and cook until heated through.

    This looks great. I love curry but don't find many recipes that call for it. I guess you either love it or NOT! :)
