Curried Rice Pilaf Recipe
I make this homey rice dish often. It's easy and fragrant and something a little different from the usual plain rice.

Ingredients
  • 1 tbsp butter
  • 1 c uncooked long grain rice
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 stalk celery, sliced
  • 1 tbsp curry powder
  • 1 3/4 c chicken broth
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/2 c raisins
  • 1/2 c pecans, chopped

Directions
  1. In a large saucepan melt the butter then add the rice and cook for about 5 minutes or until browned. Remove and set aside.
  2. In the same pan heat the olive oil then add the onion, celery, and curry powder and cook for about 5-10 minutes or until veggies are softened.
  3. Stir the rice back in and add the chicken broth, salt and pepper. Bring to a boil.
  4. Lower the heat and simmer for about 20 minutes or until rice absords liquid.
  5. Stir the raisins and pecans in and cook until heated through.

This looks great. I love curry but don't find many recipes that call for it. I guess you either love it or NOT! :)
