South Of The Border Salad Recipe
I love Taco Salads and this is one of the best.

Ingredients
  • 1 pound chorizo sausage, cut into bite-sized chunks or
  • 1 pound ground-beef seasoned with ground cumin, salt & pepper
  • 1 head ice-berg lettuce, washed, dried, and thinly sliced
  • 2 large ripe tomatoes, coarsely chopped
  • 3 scallions, coarsely chopped or 1 medium onion, diced
  • 1 pound cheddar cheese, shredded
  • 1 cucumber, peeled, seeded & diced
  • 15 ounces taco chips, broken into bite-sized pieces
  • 1 cup store-bought tomato salsa

Directions
  1. Cook the sausage or beef in a skillet over medium heat, stirring occasionally for 5 to 7 minutes or until well browned.
  2. When the meat is done, drain it and set it aside.
  3. Combine the lettuce, tomatoes, scallions, cheese and taco chips and cucumber in a large bowl.
  4. Add the meat and salsa, toss well and serve.
