South of the Border Salad

- 1 pound chorizo sausage, cut into bite-sized chunks or shopping list
- 1 pound ground-beef seasoned with ground cumin, salt & pepper shopping list
- 1 head ice-berg lettuce, washed, dried, and thinly sliced shopping list
- 2 large ripe tomatoes, coarsely chopped shopping list
- 3 scallions, coarsely chopped or 1 medium onion, diced shopping list
- 1 pound cheddar cheese, shredded shopping list
- 1 cucumber, peeled, seeded & diced shopping list
- 15 ounces taco chips, broken into bite-sized pieces shopping list
- 1 cup store-bought tomato salsa shopping list
How to make it
- Cook the sausage or beef in a skillet over medium heat, stirring occasionally for 5 to 7 minutes or until well browned.
- When the meat is done, drain it and set it aside.
- Combine the lettuce, tomatoes, scallions, cheese and taco chips and cucumber in a large bowl.
- Add the meat and salsa, toss well and serve.
