This is an 'eat-anytime' dish because it is sooo good but is best as an afternoon snack or supper dessert. We like it with a scoop of ices or ice-cream on top.Be creative with toppings...nuts...figs etc.

Ingredients
  • 1 cup sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon butter
  • 2 tablespoons white rum
  • 6 medium underripe bananas

Directions
  1. Preheat oven to 400F.
  2. In a saucepan, mix the sugar, lemon juice,
  3. butter and rum together and simmer for 10 minutes.
  4. Peel the bananas and slice them in half, lengthwise.
  5. Place them cut side down, in a buttered baking dish and pour the hot syrup over them.
  6. Bake for 30 minutes, turning once. Let cool.
