Ingredients
  • 2 C. all pourpose flour
  • 1 Tbsp. baking powder
  • 11/2 tsp. baking soda
  • 3/4 tsp. salt
  • 3/4 tsp.grated nutmeg
  • 1/2 tsp. ground cloves
  • 4 large eggs
  • 11/4 c. packed light brown sugar
  • 1 c. sugar
  • 11/2 cup veg oil
  • 1/4 cup heavy cream
  • 1 TBS vanallia
  • 1TBS crystsllized ginger
  • 1 TBS. orange zest
  • 3 Cups shredded carrots
  • 1 cup chopped walnuts
  • 1 cup rasians
  • 8oz. crushed pineapple
  • Cream Cheese Frosting
  • 1 lb. cream cheese softened ( room temperature)
  • 1 stick (1/4 lb.) butter softened (room temp.)
  • 1 tsp. grated orange zest
  • 2 tsp. orange juice
  • 1 tsp.vanilla extract
  • 2 cups confectioners sugar,then sifted
  • 1 cup chopped walnuts

Directions
  1. Pan= 3 8x8= 38-40 minutes or
  2. 3 9x9 = 38-40 minutes or
  3. 1 9x13 = 40-50 minutes
  4. greese and flour pans then pre heat oven to 350degres F.
  5. 1) In a bowl mix flour,baking powder,soda,salt,nutmeg,
  6. clove,and cinnamon. Set aside.
  7. 2) In anouther bowl,beat eggsand suger on low;beat in oil,
  8. cream,vanilla,ginger , and orange zest.Mix in flour mixture;
  9. add carrots pineapple,nuts,and rasins.
  10. 3) Pour batter into pans and bake until dark golden brown
  11. and a toothpick tests clean. Cool 20 minutes in the pan;
  12. turn out and cool completly.
  13. Cream Cheese Frosting
  14. Mix all ingredints together to smooth spreadable frosting.
  15. If frosting is too soft to spread on cake put in refregerate
  16. for 20-30 minutes.
