Roasted Salmon with Lemon Relish

- 3/4 pine nuts shopping list
- 1/4 cup golden raisins shopping list
- slivered zest and juice of 1 lemon shopping list
- 4 skinless salmon fillets shopping list
- salt/pepper shopping list
- 3/4 c chopped cilantro shopping list
- 3 T live oil shopping list
- approx 5 cups of baby spinach shopping list
How to make it
- preheat oven to 450
- spread pine nuts on baking sheet, toast in oven until lightly golden (5-7 minutes)
- place raisins and zest in bowl cover w/boiling water. set aside
- place fillets on baking sheet, season w/salt and pepper
- roast until opaque (approx 8-10 minutes)
- while fillets are roasting, drain and discard liquid from raisin/zest mixture
- return mixture to small bowl and add lemon juice, pine nuts, olive oil and cilantro. Season w/salt and pepper
- Make a bed of spinach on each plate, place fillets atop, and spoon mixture over top.
