How to make it

  • preheat oven to 450
  • spread pine nuts on baking sheet, toast in oven until lightly golden (5-7 minutes)
  • place raisins and zest in bowl cover w/boiling water. set aside
  • place fillets on baking sheet, season w/salt and pepper
  • roast until opaque (approx 8-10 minutes)
  • while fillets are roasting, drain and discard liquid from raisin/zest mixture
  • return mixture to small bowl and add lemon juice, pine nuts, olive oil and cilantro. Season w/salt and pepper
  • Make a bed of spinach on each plate, place fillets atop, and spoon mixture over top.
