How to make it

  • Rinse the trout fillets. Add all the other ingredients together to make a marinade. Rub the trout fillets with 2 of the reserved lemon slices. Place trout in sealable plastic bag with marinade. Marinate 1 hour. At the same time, soak 1 large handful of wood chips in water. Prepare a medium hot fire. When ready, take trout out of marinade. Place on a turnable very-well-oiled fish rack. Grill over direct heat, skin side down, for about 5 minutes. Turn carefully and grill an additional minute. Serve with horseradish sauce and garnish with reserved lemon slices.
