Cranberry Orange Red Onion Mint Relish

- 2-12 ounce bags fresh or thawed frozen cranberries shopping list
- 4 oranges, peel and white pith cut off and discarded, fruit chopped shopping list
- 1-1/2 cups sugar shopping list
- 1/2 cup finely chopped red onion shopping list
- 1/4 cup chopped fresh mint shopping list
- 1 tablespoon minced peeled fresh ginger shopping list
- 2 teaspoons grated orange peel shopping list
How to make it
- Coarsely chop cranberries in processor using on/off turns.
- Transfer to large bowl
- Add all remaining ingredients, stir well
- Let stand at room temperature 2 hours
- Can be made 1 day ahead.
- Cover and chill
- NOTE: Very good on sandwiches. Can be spooned over cream cheese also.
