Vegetable Rice Pie

- Crust: shopping list
- 1-1/2 cups cooked long grain rice shopping list
- 3/4 cup grated parmesan cheese shopping list
- 1/4 cup mayonnaise shopping list
- 1/4 cup onions, finely chopped shopping list
- Filling: shopping list
- 1 cup fresh broccoli, chopped shopping list
- 1 cup fresh cauliflower, chopped shopping list
- 1 cup chopped carrots shopping list
- 1/4 cup chopped onions shopping list
- 1/4 cup mayonnaise shopping list
- 3 tablespoons all-purpose flour shopping list
- 1 cup milk shopping list
- salt and pepper to taste shopping list
- 3/4 cup grated parmesan cheese shopping list
How to make it
- In a bowl, combine crust ingredients and mix well.
- Press into the bottom and up the sides of a greased 9-inch pie plate.
- Set aside.
- In a saucepan, cook broccoli, cauliflower, carrots and onion in a small amount of water until crisp-tender. Drain well.
- In another saucepan, combine mayonnaise and flour until smooth.
- Cook and stir until bubbly.
- Gradually add milk, salt and pepper.
- Cook and stir over medium heat until thick, about 3 minutes.
- Stir into the drained vegetables.
- Pour into the crust.
- Sprinkle with cheese.
- Bake at 350° for 30-40 minutes or until crust edges begin to brown.
- Let stand for about 10 minutes before serving.
