Judys Black Eyed Pea Dip Recipe
We serve this every New Year's Day. A great way to have the black-eyed peas we think we have to eat on New Years.

Ingredients
  • 1 Medium Onion
  • 2 Tablespoons Butter
  • 1 151/2 ounce can Peas, rinsed and drained
  • 1 14 ounce can Artichoke hearts, chopped
  • 2 Tablespoons Parmesan Cheese
  • 1/2 cup Sour Cream
  • 1/2 cup Mayonnaise
  • 1 Pkg. Ranch dressing mix
  • 4 ounces Mozzarella Cheese

Directions
  1. Saute onion in butter.
  2. Mix all ingredients except Mozzarella Cheese together.
  3. Bake 20 minutes in 350 degree oven. Remove from oven and place cheese on top.
  4. Heat until cheese is melted.
  5. Serve with Corn Chips.

How interesting! With the cheeses, I'd bet it would be a big hit around here. We'll be trying this dip, hopefully long before the New Year.
