Cream Cheese Nut Loaf

- 8 oz cream cheese, room temperature shopping list
- 1/3 cup sugar shopping list
- 1 egg shopping list
- 2 eggs shopping list
- 1/2 cup oil shopping list
- 1/2 cup milk shopping list
- 1 tsp. grated lemon rind shopping list
- 2 1/4 cups flour shopping list
- 1/3 cup sugar shopping list
- 1/3 cup brown sugar, packed shopping list
- 1 tsp. baking soda shopping list
- 1 tsp. salt shopping list
- 1 cup chopped walnuts shopping list
How to make it
- Combine first 3 ingredients. Beat well and set aside.
- Beat remaining eggs in bowl until frothy.
- Mix in oil, milk and rind.
- Measure remaining ingredients into a separate bowl. Stir to mix well.
- Pour all at once into egg-milk mixture and stir just until moistened.
- Spoon 1/2 the batter into a greased loaf pan.
- Spoon on cheese mixture and cover with remaining batter dropping spoonfuls here and there.
- Bake at 350 degrees for 1 hour until it tests as being done.
- Cool 15 minutes in pan before carefully turning onto rack.
- This is delicious served with a hot cup of tea.
- NOTE: I hope someone can help me with this. No matter what kind of loaf I make, every time I wait to take it out of the pan, it ends up breaking in pieces or in half so I never have a nice full loaf. Except for my banana loaf. It always holds! Any idea why?
