How to make it

  • Combine first 3 ingredients. Beat well and set aside.
  • Beat remaining eggs in bowl until frothy.
  • Mix in oil, milk and rind.
  • Measure remaining ingredients into a separate bowl. Stir to mix well.
  • Pour all at once into egg-milk mixture and stir just until moistened.
  • Spoon 1/2 the batter into a greased loaf pan.
  • Spoon on cheese mixture and cover with remaining batter dropping spoonfuls here and there.
  • Bake at 350 degrees for 1 hour until it tests as being done.
  • Cool 15 minutes in pan before carefully turning onto rack.
  • This is delicious served with a hot cup of tea.
  • NOTE: I hope someone can help me with this. No matter what kind of loaf I make, every time I wait to take it out of the pan, it ends up breaking in pieces or in half so I never have a nice full loaf. Except for my banana loaf. It always holds! Any idea why?

    How long do you wait before you take it out of the pan? I usually remove mine right away, do you run a knife around the edge of the pan first to help loosen it up? If sticking is causing it to break, you might want to try lineing your pan with parchmant paper, love that stuff everything turns out better when you use it, nothing gets to dark, the end product is just a beautiful color. Hope this helps, let me know your thoughts.
