- Fresh full cream milk 1 liter shopping list
- Long grain basmati rice 62 grams shopping list
- sugar 62 grams shopping list
- safron half gram shopping list
- pistachio sliced 1 table spoon shopping list
- almonds blanched skined and sliced 1 tb spoon shopping list
How to make it
- 1 Put the Milk in a large enough skilet for boiling
- 2 Clean the rice with a wet cloth ( don't wash). Keep aside
- 3 take one t. spoon clarified butter and mix with the cleaned rice. keep aside
- 4. When Milk starts boiling add rice to the milk and continue stiring to avoid forming lumps of the rice.
- 5. When milk starts boiling again add sfron and lower the gas and let it cook stiring occasionaly to avoid sticking to bottom.
- 6. When the milk is reduced to almost half and the rice is well cooked and the rice and milk looks mixed well add sugar.
- 7. Let it cook for another 5 minutes and add pistachio and almonds and close the gas.
- 8. You may serve it hot but it tests havenly when it is served chilled.

Hi Sureka, thanks for the authentic kheer recipe and yes that is how my mother makes kheer cooking the rice with milk so long, sometimes hours, that it gets incorporated and yes it is different from firni which is made with ground rice or rice atta.
