Ingredients
  • 1 lb. tri-color rotini
  • 3 oz Gouda or Chèvre cheese
  • 1/4 C heavy cream
  • 1 clove garlic, chopped
  • 2 tsp lemon zest
  • 2 tsp lemon juice concentrate or, 1T fresh lemon juice
  • 2 C broccoli florettes
  • 1 C julienne cooked carrots
  • 2 C diced cooked chicken
  • 1T dill weed
  • Grape tomaotes
  • Salt & pepper to taste

Directions
  1. Bring a pot of salted water to a boil.
  2. Cook pasta according to pkg directions.
  3. While pasta is cooking, in a small bowl, mix cheese, cream, lemon (juice & zest) & garlic and mash with a fork.
  4. Reserve 1/2 C of water from pasta as you drain.
  5. Stir veggies, cheese mixture & chicken into pasta.
  6. Stir in hot water from pasta as needed. (you will use almost if not all of it).
  7. Season with salt & pepper, Garnish with dill weed & tomatoes.
  8. Serve hot.
