Maui Spam Muffins Recipe
I'm from Minnesota, so it was only a matter of time before I posted a Spam recipe. You can substitute Canadian bacon or ham if you fear the Spam. See pizza sauce variation at bottom of recipe.

Ingredients
  • 4 English muffins
  • butter
  • prepared mustard
  • 7-ounce can Spam, thinly sliced
  • 1 (15 1/4 -ounce) can pineapple slices, drained
  • 1 small green pepper, seeded and cut into 8 rings
  • 1/4 cup firmly-packed brown sugar
  • 2 teaspoons water

Directions
  1. Heat oven to 375°F.
  2. Spread muffin halves with butter and mustard.
  3. Layer Spam slices on each muffin half.
  4. Place 1 pineapple slice and 1 bell pepper ring on each muffin. Combine brown sugar and water; spoon over sandwiches.
  5. Place muffins on baking sheet.
  6. Bake 10 minutes or until hot.
  7. Variation: We've used pizza sauce in place of the mustard and brown sugar sauce to make mini Hawaiian pizzas. Just top each muffin with a little mozzarella.

This recipe caught my eye, since we were in Maui recently and were blown away that Spam was on every menu - we even saw signs for Burger King Spam breakfast sandwiches!! Didn't realize it was so popular there. :)


You'll have to look it up but its so huge over there because of a war something about needing something to last a long time pretty interesting!!! I can't help it either lol I know I should be ashamed of myself but it's SO good!!! I like it fried and mixed in with au gratain pots!
