Ingredients
  • 2-3 boneless, skinless, chicken breasts, cut into strips OR 1 package stir-fry beef strips
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 5 baby carrots, cut into strips
  • 3/4 cup frozen snow peas
  • Garlic, minced
  • Teriyaki or soy sauce (I use Tamari, dark soy sauce)
  • Olive oil
  • 1 cup jasmine rice

Directions
  1. Cook rice according to package directions.
  2. Saute chicken with olive oil, soy sauce, garlic and black pepper.
  3. Add sesame seeds (optional), onions and peppers. When those are almost finished, add carrots and snow peas.
  4. Serve over rice. Top with shredded cheddar cheese if desired.
