Fried Eggplant Recipe
Use this recipe in my Eggplant Parmesan recipe or serve it solo. It's great either way.

Ingredients
  • 1 large eggplant
  • 1 tablespooon salt
  • oil for frying
  • 2 eggs, beaten
  • 3/4 cup Italian bread crumbs (I've posted a recipe for this ingredient)

Directions
  1. Cut eggplant in 1/4 inch thick round slices.
  2. Rinse with cool water, drain, and pat fry with paper towels.
  3. In a large frying pan heat oil, dip eggplant in eggs, and then in bread crumbs.
  4. Fry in hot oil, until golden brown, about 5 minutes.Drain on paper towel. Serve immediately.

I haven't had fried eggplant in years, things brings back pleasant memories, must make this again soon. Great post.
