How to make it

  • Cut eggplant in 1/4 inch thick round slices.
  • Rinse with cool water, drain, and pat fry with paper towels.
  • In a large frying pan heat oil, dip eggplant in eggs, and then in bread crumbs.
  • Fry in hot oil, until golden brown, about 5 minutes.Drain on paper towel. Serve immediately.
