How to make it
- Cut eggplant in 1/4 inch thick round slices.
- Rinse with cool water, drain, and pat fry with paper towels.
- In a large frying pan heat oil, dip eggplant in eggs, and then in bread crumbs.
- Fry in hot oil, until golden brown, about 5 minutes.Drain on paper towel. Serve immediately.
