How to make it

  • Heat the butter and olive oil together in a frying pan.
  • Add the onion and fry until just browned.
  • Add the salmon and cook until barely coloured, about 2 minutes.
  • Add the green peas, stir once or twice, then add the herbs and the cream.
  • Bring gently to a simmer.
  • Taste for seasoning, then add salt and pepper.
  • Just before serving, add the capers.
  • If the cream sauce is too thick, add a tbsp or two of pasta water.
