Salmon  Green Pea Fettucine Recipe
A creamy salmon pasta with herbal undertones

Ingredients
  • 500 gms fettucine ( DON'T be mean - use a good brand - or homemade. I used Di Cecco)
  • 250 gms salmon fillet, diced
  • 2 tbps (about a 1/4 of a small onion) onion, finely diced
  • 125 gms sweet peas ( frozen - as long as they're small)
  • 1 tbsp finely chopped parsley
  • 1 tbsp finely chopped dill
  • 250 gms fresh cream
  • 1 tbsp roughly chopped capers
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 1/2 tsps sea salt
  • 1 tsp freshly ground pepper

Directions
  1. Heat the butter and olive oil together in a frying pan.
  2. Add the onion and fry until just browned.
  3. Add the salmon and cook until barely coloured, about 2 minutes.
  4. Add the green peas, stir once or twice, then add the herbs and the cream.
  5. Bring gently to a simmer.
  6. Taste for seasoning, then add salt and pepper.
  7. Just before serving, add the capers.
  8. If the cream sauce is too thick, add a tbsp or two of pasta water.
