Salmon Green Pea Fettucine

- 500 gms fettucine ( DON'T be mean - use a good brand - or homemade. I used Di Cecco) shopping list
- 250 gms salmon fillet, diced shopping list
- 2 tbps (about a 1/4 of a small onion) onion, finely diced shopping list
- 125 gms sweet peas ( frozen - as long as they're small) shopping list
- 1 tbsp finely chopped parsley shopping list
- 1 tbsp finely chopped dill shopping list
- 250 gms fresh cream shopping list
- 1 tbsp roughly chopped capers shopping list
- 1 tbsp butter shopping list
- 1 tbsp olive oil shopping list
- 1 1/2 tsps sea salt shopping list
- 1 tsp freshly ground pepper shopping list
How to make it
- Heat the butter and olive oil together in a frying pan.
- Add the onion and fry until just browned.
- Add the salmon and cook until barely coloured, about 2 minutes.
- Add the green peas, stir once or twice, then add the herbs and the cream.
- Bring gently to a simmer.
- Taste for seasoning, then add salt and pepper.
- Just before serving, add the capers.
- If the cream sauce is too thick, add a tbsp or two of pasta water.
