Middle Eastern Baked Omelet Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ballard Estate in Euless, Texas in 1991.

Ingredients
  • 1 bunch parsley finely chopped
  • 1/4 cup milk
  • 3 medium white onions diced
  • 1/4 cup flour
  • 6 eggs
  • 1 zucchini grated
  • 1 green pepper diced
  • 1/2 tablespoon salt
  • 1/2 teaspoon allspice
  • 1/4 teaspoon pepper
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vinegar
  • 1/2 cup shortening
  • 1 tomato diced
  • 1/4 cup bread crumbs

Directions
  1. Mix all ingredients except bread crumbs.
  2. Grease pan and flour with bread crumbs.
  3. Pour mixture into pan then bake at 400 for 20 minutes.
