Truffled Smashed Red Potatoes Recipe
The perfect alternative to the usual mashed potatoes. What can I say? I get bored with plain potatoes! 150 cal, 4g protein, 28g carb, 3g fat, 2g fiber

Ingredients
  • 1 1/2 lb large red potatoes, with peel, cut into 1 1/2 inch cubes
  • 3/4 cup low-fat (1%) buttermilk
  • 1 scallion, minced
  • 1 small garlic clove, minced
  • 2 tsp. unsalted butter
  • 1 1/2 tsp. white truffle oil
  • 1 tsp. sea salt, or to taste

Directions
  1. In a large saucepan over high heat, bring potatoes and 6 cups of water to a boil. Reduce heat to medium-low and simmer uncovered for 20 minutes, or until potatoes are fork tender.
  2. Meanwhile, in a small saucepan, add buttermilk, scallion, garlic, and butter. Let simmer uncovered for 5 minutes or until hot.
  3. Drain potatoes; add to a medium bowl.
  4. Whisk truffle oil into warm buttermilk mixture; add to potatoes.
  5. Mash potatoes to desired consistency.

I had some white truffle oil in my pantry for quite a few years and I did use most of it, however, it really was so old that the flavor altered to an undesirerable state so I chucked it. I'll have to buy some more becuase this recipe sounds delicious!!!


I knew if I grew red potatoes a great recipe would show up. High Five for posting such a great recipe.
