Ingredients
  • 2 cups chopped cooked chicken
  • 1 pound box of Linguine, cooked to the BEFORE al dente stage, and drained.
  • 1 large can of sliced mushrooms, drained
  • 1 medium white or yellow onion, chopped
  • 3 TB butter
  • 1 can of Cream of Chicken Soup
  • 1/2 cup half and half
  • 3 cups Monterey Jack Cheese, grated (use a good cheese)
  • 2 tsp. salt (or season to your taste)

Directions
  1. Preheat oven to 350 degrees.
  2. In a small bowl, mix the half and half in with the soup and set aside.
  3. Melt butter in frying pan and add onion and mushrooms, frying until lightly browned.
  4. Mix all of the ingredients in a large bowl while the pasta is still hot so that the cheese will melt slightly. Add the soup mix and the onions/ mushrooms with the butter in the pan and stir well until all ingredients are well-combined.
  5. Place ingredients in a 2 quart baking dish and bake for 45 minutes uncovered until the top is golden brown.
  6. Let the dish sit for a few minutes before serving.
