How to make it

  • Preheat oven to 350 degrees.
  • In a small bowl, mix the half and half in with the soup and set aside.
  • Melt butter in frying pan and add onion and mushrooms, frying until lightly browned.
  • Mix all of the ingredients in a large bowl while the pasta is still hot so that the cheese will melt slightly. Add the soup mix and the onions/ mushrooms with the butter in the pan and stir well until all ingredients are well-combined.
  • Place ingredients in a 2 quart baking dish and bake for 45 minutes uncovered until the top is golden brown.
  • Let the dish sit for a few minutes before serving.

    This looks yummy but it is too high in fat for my restricted diet. I'd replace the half and half with half Philadelphia Cream Cheese and half yogurt, or some combination. Or I could replace the cream with skim milk with 4 tablespoons of powdered milk to thicken.

    The butter could be cut down by a third, I think, without hurting the recipe. The amount of cheese could similarly be cut. One cost savings tip I've learned is the sharper the cheese, the less you need of it. So perhaps an extra old aged cheddar would work well.

    I'll try my modifications and let you know how it works out.
