Baked Chicken Linguine

- 2 cups chopped cooked chicken shopping list
- 1 pound box of linguine, cooked to the BEFORE al dente stage, and drained. shopping list
- 1 large can of sliced mushrooms, drained shopping list
- 1 medium white or yellow onion, chopped shopping list
- 3 TB butter shopping list
- 1 can of cream of chicken soup shopping list
- 1/2 cup half and half shopping list
- 3 cups monterey jack cheese, grated (use a good cheese) shopping list
- 2 tsp. salt (or season to your taste) shopping list
How to make it
- Preheat oven to 350 degrees.
- In a small bowl, mix the half and half in with the soup and set aside.
- Melt butter in frying pan and add onion and mushrooms, frying until lightly browned.
- Mix all of the ingredients in a large bowl while the pasta is still hot so that the cheese will melt slightly. Add the soup mix and the onions/ mushrooms with the butter in the pan and stir well until all ingredients are well-combined.
- Place ingredients in a 2 quart baking dish and bake for 45 minutes uncovered until the top is golden brown.
- Let the dish sit for a few minutes before serving.
