How to make it

  • Preheat the oven to 350°; grease and flour a jelly roll pan.
  • Cream the butter and the sugar in the bowl of an electric mixer. Add the remaining ingredients in sequence. Spread the mixture into the pan. Bake for 25 minutes; allow to cool in the pan. As they cool, start the Fudge Frosting.
  • Fudge Frosting
  • Combine the brown sugar, butter and baking chocolate in a medium-sized saucepan; bring to a boil. Boil for two minutes, stirring constantly. (If your arm gets tired, just keep thinking "Fudge frosting, fudge frosting!")
  • Remove from heat; add the milk, bring to a boil again. (Trust me.)
  • Remove from heat; let cool to lukewarm.
  • When cool, stir in the vanilla and the powdered sugar, a cup at a time until the frosting has reached the proper consistency.
  • The frosting can overshadow the flavor of the bars. To prevent this, remove about 1/4 of the frosting and save it in the fridge for a rainy day when you have some pretzels (graham crackers, strawberries, toast, etc.) that need to be made more interesting.
  • As the frosting cools, it will harden, so it is important to frost the bars as soon as the frosting is ready.
  • It is recommended that you leave the bars uncut, and let your family cut a piece as they wish (so they can say "I'll just have one.") Keep tightly covered with aluminum foil or plastic wrap.
  • To make these into Simon's birthday cake (from the "Firefly" episode "Out of Gas"), cut a few same-sized cocoa bars and stack/frost them like a layer cake. Add a few candles of varying heights and tell your friends "It's pretty much what we just had for supper, but I tried to get the frosting as chocolatey tasting as possible."
