Ingredients
  • 3/4 cup Pioneer baking mix (buttermilk)
  • 3 eggs
  • 1 cup sugar
  • 1 cup chopped pecans
  • 2/3 cup canned or cooked pumpkin
  • 2 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. nutmeg
  • center of roll ingredients:
  • 1 cup confectioners sugar
  • 8 oz. cream cheese
  • 6 tbsp. margarine
  • 1 tsp. vanilla flavoring

Directions
  1. Beat together eggs and sugar with mixer on medium speed.
  2. Add pumpkin and dry ingredients.
  3. Pour into greased jelly roll pan and sprinkle with nuts.
  4. Bake at 375 degrees for 12-15 minutes.
  5. Turn out on a tea towel that has been sprinkled with confectioners sugar.
  6. Roll up and cool completely. (Roll towel up with cake to keep it from sticking to itself.)
  7. Mix center ingredients together: spread on unrolled cake.
  8. Reroll, without towel and refrigerate for 2 hrs.

I've never seen the baking mix before, could you use bisquick?


Yes you can use bisquick, or any other type baking mix. I have used bisquic, but I prefer the pioneer baking mix, it just taste better in my opinion. I live in the south and you can find the pioneer baking mix at any Wal-Mart super store. Hope you enjoy.
