Someones Irish Stew

- 1/4 c olive oil shopping list
- 500g stew beef, cut in inches shopping list
- 6 large garlic cloves, minced shopping list
- 6 c beef stock shopping list
- 1 c Guiness beer shopping list
- 1 c fine red wine shopping list
- 2 tbs tomato paste shopping list
- 1 tbs sugar shopping list
- 1 tbs dried thyme shopping list
- 1 tbs worcestershire sauce shopping list
- 2 bay leaves shopping list
- 2 tbs butter shopping list
- 1.3 kg potatoes shopping list
- 1 large onion shopping list
- 2 cups 1/2 inch pieces carrots shopping list
- salt and pepper shopping list
- 2 tbs fresh chopped parsley shopping list
How to make it
- Heat olive oil in heavy large pot over medium-high heat. Add beef and saute until brown on all sides, bout 5 min. Add garlic and saute for 1 min. Add beef stock, Guiness, red wine, tomato paste, sugar, thyme, worcestershire sauce and bay leaves. Stir to combine. Bring mixture to boil. Reduce heat to medium low, then cover and simmer 1 hour stirring occassionally.
- while the meat and stock are simmering, melt butter in another large pot over medium heat. Add potatoes, onion and carrots, Saute vegies till golden about 20 min
- Add vegetables to beef stew. Simmer uncovered until vegies and beef are very tender, about 40 min. Discard bay leaves. Tilt pan and spoon of any fat. Transfer to serving bowls. Sprinkle with parsley and serve. Salt and pepper to taste
