How to make it

  • Heat olive oil in heavy large pot over medium-high heat. Add beef and saute until brown on all sides, bout 5 min. Add garlic and saute for 1 min. Add beef stock, Guiness, red wine, tomato paste, sugar, thyme, worcestershire sauce and bay leaves. Stir to combine. Bring mixture to boil. Reduce heat to medium low, then cover and simmer 1 hour stirring occassionally.
  • while the meat and stock are simmering, melt butter in another large pot over medium heat. Add potatoes, onion and carrots, Saute vegies till golden about 20 min
  • Add vegetables to beef stew. Simmer uncovered until vegies and beef are very tender, about 40 min. Discard bay leaves. Tilt pan and spoon of any fat. Transfer to serving bowls. Sprinkle with parsley and serve. Salt and pepper to taste

    When I got down to the Guinness I knew this one has to be good! I've made a beef carbonade with Guinness stout and it is hearty and satisfying. Your stew has to be, too.
