Clam Sauce For Linguine Recipe
This is another family favorite that we have been preparing for years! Hope you all love it as much as my family has.

Ingredients
  • 2 Tbsp olive oil
  • 1/2 cup chopped green onions
  • 2 cloves garlic, chopped
  • 2 tomatoes, peeled and chopped
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 2 (6oz) cans chopped clams with juice
  • 1/4 cup Parmesan cheese
  • Hot cooked Linguine
  • Parmesan cheese for garnish

Directions
  1. Peel tomatoes by submerging in boiling water. Tomato peels will split and can easily be peeled off. Chop.
  2. Add 2 Tbsp olive oil to saute pan and saute garlic and green onions until soft. Add tomatoes, pepper, salt, oregano and basil. Saute until tomatoes are very soft. Drain clam juice into sauce and let come to a boil. Boil until reduced, adding Parmesan cheese to thicken.
  3. Boil water and cook Linguine. Once Linguine has been added to boiling water, add clams to sauce. They really only need to heat through.
  4. Serve sauce on hot cooked Linguine and garnish with Parmesan cheese.
