How to make it

  • Two hours before you're ready to get going, combine the oatmeal and cider and put in the refrigerator. You can cut the time in half by microwaving the mixture for 30 seconds, but the result, while fine, is not quite the same.
  • Preheat the oven to 350 F.
  • Drain the oatmeal, keep the cider.
  • Combine the dry ingredients.
  • Cream the butter and both sugars until light and fluffy. Just let it go!
  • Add the eggs one at a time.
  • Beat in the vanilla and orange zest.
  • Add the flour in three additions, alternating with the cider. Do not overmix.
  • Fold in the oatmeal.
  • Pour into a prepared 9" round pan and bake for 55 to 65 minutes.
  • *I can never seem to remember to take eggs out of the refrigerator so that they are at room temperature for baking. So I cheat. Take those cold eggs and put them in a bowl of very warm water. Give them a gentle shake after a minute or two. They should be at the right temp in about 5 minutes. Why bother? Adding cold eggs to the room temp butter and sugar mixture will cause the batter to "break." You'll know this has happened because the batter takes on a curdled look. Not a big deal, but it does result in the final product having an off mouth-feel for people who are concerned with such things.

    Ooooh, yummy sounding! Going apple picking on Saturday and they always have great cider! I do the "cheat" thing too with my eggs sometimes, btw, especially with cheesecakes where it's important!
