How to make it

  • In large saucepan heat the oil.
  • Add onions, green peppers and garlic.
  • Saute for 3 minutes.
  • Add black beans and oregano.
  • Bring to a boil then cook over medium heat for 5 minutes.
  • Add balsamic vinegar and remove from heat.
  • Stir in red peppers.
  • To serve place rice in individual serving bowls and spoon beans on top.
  • Sprinkle with tomatoes, cheese and hot sauce.

    I MADE THIS TONIGHT..EVERYTHING BUT THE TOMATOES..I DID ADD A LITTLE ADOBO ..IT WAS FANTASTIC THANKS FOR SHARING!
