Swiss Crabwiches Recipe
These broiled crab and cheese open-faced sandwiches are great for brunch or a luncheon with friends.

Ingredients
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon dry mustard
  • 1 teaspoon lemon juice
  • 1/4-1/2 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon ground nutmeg
  • 1/4 pound sliced bacon, crisply cooked, drained and crumbled
  • 1 pound crabmeat
  • 6-8 scallions, thinly sliced
  • 2 cups shredded swiss cheese
  • 4 Kaiser rolls or French rolls, split, buttered and toasted

Directions
  1. Cook bacon until crisp. Drain and crumble.
  2. In a bowl, combine sour cream, mayonnaise, mustard, lemon juice, garlic powder, pepper and nutmeg.
  3. Mix until well blended.
  4. Stir in bacon, crabmeat, onions and cheese.
  5. Butter and lightly toast the rolls.
  6. Spread about 1/4 cup of the mixutre onto each half of roll.
  7. Place on a rimmed baking sheet and broil about 6-inches from the heat until golden brown, about 5 minutes.
  8. Serve warm.
