How to make it

  • Shred zucchini and squeeze out any moisture. You should have about 4 cups lightly packed.
  • In a large bowl, beat eggs lightly.
  • Stir in the zucchini and 1/2 cup mozzarella and 1/2 cup shredded cheddar cheese.
  • Mix until well blended.
  • Press zucchini mixture into a greased 10x15-inch pan.
  • Bake at 400° for 10 minutes.
  • Meanwhile, crumbled beef into a frying pan and cook over medium heat.
  • Stir to break up the meat until it is browned.
  • Sprinkle with garlic salt and some salt.
  • Add onions and cook until soft.
  • Drain off and discard drippings.
  • Stir in tomato sauce and oregano.
  • Spoon meat mixture over zucchini crust.
  • Arrange pepper strips and mushrooms on top.
  • Sprinkle with parmesan cheese, remaining mozzarella cheese and remaining cheddar cheese.
  • Bake on the lowest rack of a 400° oven for about 30 minutes or until cheeses are bubbly.
