No Bread Zucchini Pizza

- 2 pounds zucchini, 4 cups shredded shopping list
- 2 large eggs shopping list
- 1 cup shredded mozzarella cheese shopping list
- 1 cup shredded sharp cheddar cheese shopping list
- 1/2 cup grated parmesan cheese shopping list
- 1 pound lean ground beef shopping list
- 1/4-1/2 teaspoon garlic salt shopping list
- salt to taste, optional shopping list
- 1 medium onion, chopped shopping list
- 1- 8 ounce can tomato sauce shopping list
- 2 teaspoons oregano leaves shopping list
- 1 green pepper, seeded and cut into thin strips shopping list
- 1/2 pound fresh mushrooms, sliced shopping list
How to make it
- Shred zucchini and squeeze out any moisture. You should have about 4 cups lightly packed.
- In a large bowl, beat eggs lightly.
- Stir in the zucchini and 1/2 cup mozzarella and 1/2 cup shredded cheddar cheese.
- Mix until well blended.
- Press zucchini mixture into a greased 10x15-inch pan.
- Bake at 400° for 10 minutes.
- Meanwhile, crumbled beef into a frying pan and cook over medium heat.
- Stir to break up the meat until it is browned.
- Sprinkle with garlic salt and some salt.
- Add onions and cook until soft.
- Drain off and discard drippings.
- Stir in tomato sauce and oregano.
- Spoon meat mixture over zucchini crust.
- Arrange pepper strips and mushrooms on top.
- Sprinkle with parmesan cheese, remaining mozzarella cheese and remaining cheddar cheese.
- Bake on the lowest rack of a 400° oven for about 30 minutes or until cheeses are bubbly.
