No Bread Zucchini Pizza Recipe

Ingredients

2 pounds zucchini, 4 cups shredded

2 large eggs

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1/2 cup grated parmesan cheese

1 pound lean ground beef

1/4-1/2 teaspoon garlic salt

salt to taste, optional

1 medium onion, chopped

1- 8 ounce can tomato sauce

2 teaspoons oregano leaves

1 green pepper, seeded and cut into thin strips

1/2 pound fresh mushrooms, sliced

Directions

Shred zucchini and squeeze out any moisture. You should have about 4 cups lightly packed.

In a large bowl, beat eggs lightly.

Stir in the zucchini and 1/2 cup mozzarella and 1/2 cup shredded cheddar cheese.

Mix until well blended.

Press zucchini mixture into a greased 10x15-inch pan.

Bake at 400° for 10 minutes.

Meanwhile, crumbled beef into a frying pan and cook over medium heat.

Stir to break up the meat until it is browned.

Sprinkle with garlic salt and some salt.

Add onions and cook until soft.

Drain off and discard drippings.

Stir in tomato sauce and oregano.

Spoon meat mixture over zucchini crust.

Arrange pepper strips and mushrooms on top.

Sprinkle with parmesan cheese, remaining mozzarella cheese and remaining cheddar cheese.

Bake on the lowest rack of a 400° oven for about 30 minutes or until cheeses are bubbly.
