How to make it

  • Season chicken with salt, pepper and thyme.
  • Fry bacon until crisp then set aside.
  • Add oil and heat then brown chicken pieces on all sides.
  • Add bacon, mushrooms, onion and apple.
  • Heat rum then ignite and pour flaming over chicken.
  • Add apple juice then cover and simmer for 45 minutes.
  • Arrange chicken on a heated platter.
  • Stir cream into sauce and heat to boiling point then pour over chicken.
  • Garnish with parsley and serve immediately.

    Great recipe, and a great way to preserve a piece of history... that reminds me, I bought a recipe box from an estate sale. Think I'll get it out and post a few recipes!
