Annapolis Valley Chicken

- 3 pound chicken cut up shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1/2 teaspoon thyme shopping list
- 1/4 pound bacon diced shopping list
- 2 tablespoons oil shopping list
- 1 small onion chopped shopping list
- 1/2 pound mushrooms sliced shopping list
- 2 apples cored peeled and sliced shopping list
- 1/4 cup dark rum shopping list
- 1/2 cup apple juice shopping list
- 2 tablespoons finely chopped parsley shopping list
- 1/2 cup cream shopping list
How to make it
- Season chicken with salt, pepper and thyme.
- Fry bacon until crisp then set aside.
- Add oil and heat then brown chicken pieces on all sides.
- Add bacon, mushrooms, onion and apple.
- Heat rum then ignite and pour flaming over chicken.
- Add apple juice then cover and simmer for 45 minutes.
- Arrange chicken on a heated platter.
- Stir cream into sauce and heat to boiling point then pour over chicken.
- Garnish with parsley and serve immediately.
