Annapolis Valley Chicken Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boswell Estate in Arlington, Texas in 1984.

Ingredients
  • 3 pound chicken cut up
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon thyme
  • 1/4 pound bacon diced
  • 2 tablespoons oil
  • 1 small onion chopped
  • 1/2 pound mushrooms sliced
  • 2 apples cored peeled and sliced
  • 1/4 cup dark rum
  • 1/2 cup apple juice
  • 2 tablespoons finely chopped parsley
  • 1/2 cup cream

Directions
  1. Season chicken with salt, pepper and thyme.
  2. Fry bacon until crisp then set aside.
  3. Add oil and heat then brown chicken pieces on all sides.
  4. Add bacon, mushrooms, onion and apple.
  5. Heat rum then ignite and pour flaming over chicken.
  6. Add apple juice then cover and simmer for 45 minutes.
  7. Arrange chicken on a heated platter.
  8. Stir cream into sauce and heat to boiling point then pour over chicken.
  9. Garnish with parsley and serve immediately.

Great recipe, and a great way to preserve a piece of history... that reminds me, I bought a recipe box from an estate sale. Think I'll get it out and post a few recipes!
