We have a Farmer's Market open Thurs., Fri., and Sat. and I take the opportunity to gather all the ingredients there. This is a great sandwich.

Ingredients
  • 3 tablespoons butter
  • 1-1/2 cups fresh mushrooms, sliced
  • 1/2 cup sliced red onion, separated into rings
  • 2 cups zucchini, and 2 medium-sized, sliced thin
  • 1 teaspoon dried basil leaves
  • 1/2 teaspoon finely chopped fresh garlic
  • salt and pepper to taste, not too much though
  • 4 New York deli-style bagels, Split: plain, everything, sun-dried tomato or sesame work great
  • 2 cups shredded monterey jack cheese
  • 8 slices of tomato

Directions
  1. Heat oven to 375°.
  2. Melt butter in a skillet until sizzling and add mushrooms, red onion, zucchini, basil, garlic, salt and pepper.
  3. Cook over medium heat, stirring occasionally, until vegetables are crisp-tender. About 5 minutes.
  4. Meanwhile, place bagels on a baking sheet.
  5. Place half the cheese on each bagel half.
  6. Bake for 5 minutes or until cheese is melted.
  7. Remove bagels from the oven and top each with 1 slice of tomato.
  8. Divide vegetable mixture between bagels and top with remaining cheese.
  9. Continue baking for 5 minutes or until cheese is melted.
