Mexican Coleslaw Recipe
This is a very light and refreshing slaw. Goes good with just about anything and it is quick and easy to make.

Ingredients
  • 2 cups very thinly sliced green cabbage
  • 1-1/2 cups peeled and grated carrots
  • 1/3 cup chopped cilantro
  • 1/4 cup rice vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon salt

Directions
  1. Place cabbage and carrots in a colander then rinse thoroughly with cold water to crisp.
  2. Let drain for 5 minutes.
  3. Meanwhile whisk cilantro, vinegar, oil and salt in a large bowl.
  4. Add cabbage and carrots and toss well to coat.

If it has cilantro, it has to be good. I really believe I am addicted to cilantro. This is my favorite way to fix slaw. Don't care for the mayo/sweet kind. Thanks for posting
