Mexican Coleslaw

                    - 2 cups very thinly sliced green cabbage shopping list
- 1-1/2 cups peeled and grated carrots shopping list
- 1/3 cup chopped cilantro shopping list
- 1/4 cup rice vinegar shopping list
- 2 tablespoons extra-virgin olive oil shopping list
- 1/4 teaspoon salt shopping list
How to make it 
                    - Place cabbage and carrots in a colander then rinse thoroughly with cold water to crisp.
- Let drain for 5 minutes.
- Meanwhile whisk cilantro, vinegar, oil and salt in a large bowl.
- Add cabbage and carrots and toss well to coat.
