Baked Acron Squash Recipe
This is a fun fall side dish . The apple cider and squash taste very good together. This recipe is from a friend.

Ingredients
  • 2 medium acorn squash, sliced crosswise in 1-inch circles, seeds removed
  • 1/2 cup apple cider or apple juice
  • 1/4 cup brown sugar
  • 1/2 tsp salt
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground mace

Directions
  1. Place squash in a 15 x 10 x 1-inch baking pan.
  2. Pour cider or juice over squash
  3. combine remaining ingredients and sprinkle on top
  4. Cover with foil
  5. Bake at 325* for 45 minutes or until squash is tender

Rings display out nice on the plate. The center hole can be used to frame another side dish, say a dollop of herbed rice.

Alterations


Squash preparation: Slice cross-wise in half; scrape out seeds and strings, then continue to slice into 1-inch rings. It gives you something to hold on to while cleaning the center.
