- • coconut milk (1 CUP) shopping list
- • chicken stock (1 CUP) shopping list
- • fish sauce (2 TBSP) shopping list
- • Thai red curry paste (2 TBSP) shopping list
- • brown sugar (2 TBSP) shopping list
- • salt (½TBSP) shopping list
- • zucchini (1 CUBED) shopping list
- • red pepper (1 CUBED) shopping list
- • red pepper flakes (½TBSP) shopping list
- • pineapple chunks(½ CAN) shopping list
- • chicken (12 OZ CUBED) shopping list
- • lemon (1) shopping list
- • basil leaves (Sliced as desired) shopping list
How to make it
- Heat Oil in Pan (Medium Heat)
- Cook Onion until translucent
- Add Curry Paste, Garlic & Ginger, Stir
- Add Coconut Milk, Stock, Fish Sauce, Sugar, & Salt.
- Add Red Pepper, Zucchini, Red Pepper Flakes & Cover
- Add Chicken & Pineapple
- Separately, Mix Cornstarch with equal amounts of water, Add Mixture to Pan.
- Add Lemon Juice & Zest, and Basil.
- Serve Over Rice
