Yuca With Garlic Sauce Con Mojo

- 3lbs yucca root, halved & in chunks shopping list
- 2tsp salt shopping list
- 2 lime, juice of shopping list
- 12 garlic cloves, mashed shopping list
- 2tsp salt shopping list
- 2/3cup fresh lemon juice shopping list
- 1 cup olive oil shopping list
- 2 onion, chopped fine shopping list
How to make it
- Place yucca in saucepan; until yucca is just covered, add salt and lime juice and bring to a boil.
- Reduce heat, cover and simmer until tender--about 30 minutes.
- Drain and keep warm.
- Mash garlic cloves into salt with mortar and pestle (or use food processor).
- Add garlic, lemon juice, and onions to olive oil in a separate pan, heat until bubbling, then pour over yucca.
- Toss yucca & sauce "lightly" cooking to saute over medium heat; till barely brown but not CRISP!
- Serve.

Hi Judy!!! Coming from cuban family!! let me tell you!! This stuff is offf the chain! I will definately give this recipe a try, though you and I know theres nothing like moms homemade Yucca!
