Ingredients
  • 4 ounces uncooked macaroni
  • 2-1/2 cups chopped, seeded tomatoes
  • 1 cup finely chopped red onion
  • 1 cup finely chopped cucumber
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped green bell pepper
  • 1/2 cup finely chopped red bell pepper
  • 3 tablespoons cider vinegar
  • 2 tablespoons finely chopped black olives
  • 1 bay leaf
  • 2 tablespoons minced fresh parsley
  • 1 tablespoons fresh thyme
  • 1 clove garlic, minced
  • 3-4 dashes hot sauce
  • fresh ground black pepper
  • Garnish: whole olives, cucumber slices and dill sprigs.

Directions
  1. Cook pasta according to package directions, omitting salt in water.
  2. Drain and rinse well under cold water unti pasta is cool.
  3. Drain well.
  4. Combine pasta and remaining ingredients in a bowl.
  5. Cover and refrigerate for 4 hours so flavors blend.
  6. Remove bay leaf before serving.
  7. Garnish with whole olives, cucumber slices and dill sprigs.
  8. Makes 6-1 cup servings.
