Gazpacho Macaroni Salad

- 4 ounces uncooked macaroni shopping list
- 2-1/2 cups chopped, seeded tomatoes shopping list
- 1 cup finely chopped red onion shopping list
- 1 cup finely chopped cucumber shopping list
- 1/2 cup finely chopped celery shopping list
- 1/2 cup finely chopped green bell pepper shopping list
- 1/2 cup finely chopped red bell pepper shopping list
- 3 tablespoons cider vinegar shopping list
- 2 tablespoons finely chopped black olives shopping list
- 1 bay leaf shopping list
- 2 tablespoons minced fresh parsley shopping list
- 1 tablespoons fresh thyme shopping list
- 1 clove garlic, minced shopping list
- 3-4 dashes hot sauce shopping list
- fresh ground black pepper shopping list
- Garnish: whole olives, cucumber slices and dill sprigs. shopping list
How to make it
- Cook pasta according to package directions, omitting salt in water.
- Drain and rinse well under cold water unti pasta is cool.
- Drain well.
- Combine pasta and remaining ingredients in a bowl.
- Cover and refrigerate for 4 hours so flavors blend.
- Remove bay leaf before serving.
- Garnish with whole olives, cucumber slices and dill sprigs.
- Makes 6-1 cup servings.
