Authentic Peri-peri Prawns

- 10 birds eye or other hot chillis (adjust amount to taste-fresh or dried may be used) shopping list
- 1/2 cup butter shopping list
- 1/4 cup good olive oil shopping list
- 1/4 cup lemon juice shopping list
- 4 cloves garlic - minced shopping list
- Tbs paprika shopping list
- salt and pepper to taste shopping list
- Jumbo or other large prawns shopping list
How to make it
- Melt butter
- Blend or grind chillis to paste or powder (if using dried)
- Mix all ingredients to make marinade
- Clean and butterfly prawns leaving head/shells on.
- Baste prawns with marinade and grill/BBQ till cooked
- Baste regularly during cooking
- Warm excess marinade and use as a dipping dauce.
- Also goes well with chicken joints
- Cut deep slashes in chicken and rub in marinade.
- Leave covered in fridge overnigh
- Proceed as above
