How to make it

  • Melt butter
  • Blend or grind chillis to paste or powder (if using dried)
  • Mix all ingredients to make marinade
  • Clean and butterfly prawns leaving head/shells on.
  • Baste prawns with marinade and grill/BBQ till cooked
  • Baste regularly during cooking
  • Warm excess marinade and use as a dipping dauce.
  • Also goes well with chicken joints
  • Cut deep slashes in chicken and rub in marinade.
  • Leave covered in fridge overnigh
  • Proceed as above

    This is one spicy dish! Hits the high notes for me. Those little peppers are devilish! This sounds great.
