With the cooler weather here...(well it has snowed in IDAHO all ready) I thought I would share one of my favorite cookies. These are so soft and just melt right in your mouth. They are easy to make and taste wonderful.

Ingredients
  • 1/2 cup butter, butter crisco or margarine( I use real butter for these)
  • 1 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 3 1/2 cups flour
  • 1 tsp cream of tartar
  • 1 tsp soda
  • 1 tsp salt
  • 1 cup dates or raisins(I use the dates)
  • Date filling instructions below.

Directions
  1. Cream butter and add sugar, egg, milk .
  2. Add the dry ingredients and mis well
  3. For the Filling:
  4. Add to a sauce pan:
  5. 1 cup chopped dates or raisins
  6. 3/4 cup white sugar
  7. 2 tbsp flour
  8. 1 cup water
  9. Cook until thick , about 8 min.
  10. Cool filling.
  11. Roll out cookie dough
  12. Cut into round circles.(use a cookie cutter or the top of a glass)
  13. Fill with filling,fold circle in half and seal with fork.
  14. Bake until lightly brown(around 9 min) at 350*

This is great recipe.We have a similar recipe in the oriental cusine and yes it is best with real butter.Thanks for sharing.

Alterations


Is possible something missing like baking soada or baking powder, The filling is great tasting the cookies taste is good also especailly with a little almond extract, but I baked some the other day and the cookie texture was somewhere between cardboartd and plywood. Ther is no leaveneing to sften the texture, should be maybe some baking soda?


So sorry I left the baking soda out..add 1 tsp. I hope you will try them again..they are so good...the outside cookie part should be firm but not plywood.
