PRAWN SCAMPI

- 2 lbs. (1 kg) prawns shopping list
- 4 cloves garlic, pressed or finely chopped shopping list
- 1/2 C. olive oil shopping list
- 3 TBSP. dried parsley flakes shopping list
- 3 TBSP. finely chopped fresh parsley shopping list
- 2 TBSP. lemon juice shopping list
- 2 tsp. salt shopping list
- 1 tsp. dry mustard shopping list
- 1/4 tsp. pepper shopping list
How to make it
- For uncooked prawns:
- Fill a large pot with water and bring to boil.
- Dump in prawns (in shells) and when water again boils, stir for about 3 minutes until bright pink.
- Shell prawns.
- For cooked/frozen and shelled prawns:
- Dump prawns into colander and run cold water over them until they thaw out. Drain.
- Mix all ingredients (except the prawns) into a large measuring cup.
- Place shelled prawns in shallow broiling pan.
- Pour marinade over prawns and marinate at least 30 minutes. The longer, the better the flavor.
- Preheat broiler to 500 degrees F.
- Place broiling pan about 4 inches from the heat and broil approximately 10 minutes.
- Serve over long grain brown rice.
- Serves 2 - 4...depending on their appetite and whatever else you'll be serving at the meal.
- Alternative: You may also use scallops or shrimp instead of the prawns. I've only ever tried the recipe with the prawns or very large shrimp.
