This has to be the very best Scampi recipe I've ever had or made! Trust me...you'll love it!!!

Ingredients
  • 2 lbs. (1 kg) Prawns
  • 4 cloves garlic, pressed or finely chopped
  • 1/2 C. olive oil
  • 3 TBSP. dried parsley flakes
  • 3 TBSP. finely chopped fresh parsley
  • 2 TBSP. lemon juice
  • 2 tsp. salt
  • 1 tsp. dry mustard
  • 1/4 tsp. pepper

Directions
  1. For uncooked prawns:
  2. Fill a large pot with water and bring to boil.
  3. Dump in prawns (in shells) and when water again boils, stir for about 3 minutes until bright pink.
  4. Shell prawns.
  5. For cooked/frozen and shelled prawns:
  6. Dump prawns into colander and run cold water over them until they thaw out. Drain.
  7. Mix all ingredients (except the prawns) into a large measuring cup.
  8. Place shelled prawns in shallow broiling pan.
  9. Pour marinade over prawns and marinate at least 30 minutes. The longer, the better the flavor.
  10. Preheat broiler to 500 degrees F.
  11. Place broiling pan about 4 inches from the heat and broil approximately 10 minutes.
  12. Serve over long grain brown rice.
  13. Serves 2 - 4...depending on their appetite and whatever else you'll be serving at the meal.
  14. Alternative: You may also use scallops or shrimp instead of the prawns. I've only ever tried the recipe with the prawns or very large shrimp.
