Garlic Chilli Sauce Recipe
This is a spicy garlicky sauce goes well will with fried, grilled or baked fish with rice.

Ingredients
  • 30 Garlic cloves sliced thinly
  • 2 medium size tomatoes diced finely.
  • 500 ml of Louisiana hot sauce (2 cups)
  • 2 table spoons tomato paste
  • I tea spoon salt
  • 1 table spoon sugar
  • 2 table spoons cilantro leaves chopped
  • 2 table spoons vegetable oil
  • 1/2 cup of water

Directions
  1. Heat oil in a deep frying pan
  2. Add garlic slices and fry until golden brown in color
  3. Add tomato paste and fry for one minute
  4. Add diced tomatoes, chopped cilantro leaves and fry for 5 minutes
  5. Add salt, sugar and water and mix for 1 minute
  6. Add louisiana hot sauce
  7. Simmer uncovered for 15 minutes on medium heat.
  8. Adjust thickness as desired. It should be the consistancy of tomato puree or mango juice.
  9. Enjoy with fried fish and rice. Yet you may try with lamb also
