This is a good way to use up leftover pork, its easy, cheap and flavorful. I got it from a Betty Crocker recipe card.

Ingredients
  • 4 ounces uncooked fine noodles
  • 2 tablespoons shortening
  • 2 cups cut-up cooked pork
  • 1 can (10 1/2 oz ) condensed cream of chicken soup
  • 1 can (8oz) whole kernel corn
  • 1 can (2oz) sliced pimiento
  • 1 cup shredded sharp cheddar cheese (about 4oz)
  • 1 medium green pepper, finely chopped

Directions
  1. Preheat oven to 350.F
  2. Cook noodles as directed on package; drain.
  3. Melt shortening in a large sillet; brown meat. Drain off fat. Stir n noddles, soup, corn (with liquid), pimiento (with liquid), cheese and green pepper.
  4. Pour into greased 1-quart casseroe.
  5. Bake uncovered 45 minutes, stirring occasionally.

Sounds like a good way to use up the leftover pork, I usually make BBQ out of mine, but this gives me another way, thanks, great post.
