Lazy Sunday Fruit Cobbler Recipe
I call this dessert of my mom's "lazy Sunday" fruit cobbler because it's great when you want a light dessert without much effort. It's warm, a little sweet, and you can eat it in your pajamas on a Sunday night (or any night! :).

  • 2 21-oz cans of "pie filling" fruit - my favorites are blueberries or cherries, but you can use whatever you like
  • 1/4 cup plus 2 Tbsp. cream (or half & half, if preferred)
  • 1 cup Bisquick
  • 1 Tbsp. sugar

Directions
  1. Preheat oven to 400 degrees.
  2. Put your fruit in a pan and heat it up on the stove on low heat- get it warm but not boiling.
  3. Pour warmed fruit into an 8" or 9" round baking dish that is at least 3-4 inches deep.
  4. "Dot" the fruit layer with about 10-12 small pats of butter (scattered around evenly) and sprinkle cinnamon on top.
  5. Stir together cream, Bisquick, and sugar in a bowl until just mixed- it will be thick (don't worry about getting all the lumps out).
  6. Drop the Bisquick mixture by rounded tablespoonfuls all over the top of the fruit until mostly covered.
  7. Bake about 20 min. -so the Bisquick mixture is raised and just slightly browned on top. Check to see if it is done all the way through.
  8. Let cool, and enjoy! :)
