How to make it

  • Preheat oven to 400°F.
  • Grease and flour an 8-inch square baking pan
  • In bowl, sift together flour, baking soda, ginger, cinnamon, and salt.
  • In small bowl, beat egg slightly
  • Stir egg into flour mixture along with sugar, molasses, oil
  • Stir all together
  • Add boiling water slowly, whisking until combined well
  • Pour batter into pan
  • Bake gingerbread in middle of oven 25 minutes, or until a tester inserted in center comes out clean
  • NOTE: Add a little ginger or cinnamon to whipped cream. Top gingerbread square with whipped cream, top whipped cream with a little dollop of apricot preserves ENJOY!
