8x8 Quick Gingerbread Topped With Whipped Cream Apricot Preserves Recipe
If you want just a SMALL PAN of gingerbread, this is the recipe. Spicy, moist, served with gingered whipped cream, dolloped with apricot preserves. This is down right yummy, especially on a cool day!

Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon ground ginger
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup sugar
  • 1/2 cup unsulfured molasses
  • 1/2 cup vegetable oil
  • 1/2 cup boiling water

Directions
  1. Preheat oven to 400°F.
  2. Grease and flour an 8-inch square baking pan
  3. In bowl, sift together flour, baking soda, ginger, cinnamon, and salt.
  4. In small bowl, beat egg slightly
  5. Stir egg into flour mixture along with sugar, molasses, oil
  6. Stir all together
  7. Add boiling water slowly, whisking until combined well
  8. Pour batter into pan
  9. Bake gingerbread in middle of oven 25 minutes, or until a tester inserted in center comes out clean
  10. NOTE: Add a little ginger or cinnamon to whipped cream. Top gingerbread square with whipped cream, top whipped cream with a little dollop of apricot preserves ENJOY!
