8x8 Quick Gingerbread Topped With Whipped Cream Apricot Preserves

- 1 cup all-purpose flour shopping list
- 1/2 teaspoon baking soda shopping list
- 3/4 teaspoon ground ginger shopping list
- 3/4 teaspoon cinnamon shopping list
- 1/2 teaspoon salt shopping list
- 1 large egg shopping list
- 1/2 cup sugar shopping list
- 1/2 cup unsulfured molasses shopping list
- 1/2 cup vegetable oil shopping list
- 1/2 cup boiling water shopping list

How to make it
- Preheat oven to 400°F.
- Grease and flour an 8-inch square baking pan
- In bowl, sift together flour, baking soda, ginger, cinnamon, and salt.
- In small bowl, beat egg slightly
- Stir egg into flour mixture along with sugar, molasses, oil
- Stir all together
- Add boiling water slowly, whisking until combined well
- Pour batter into pan
- Bake gingerbread in middle of oven 25 minutes, or until a tester inserted in center comes out clean
- NOTE: Add a little ginger or cinnamon to whipped cream. Top gingerbread square with whipped cream, top whipped cream with a little dollop of apricot preserves ENJOY!
