This is one of my favorite recipes. It was given to me by a good friend several years ago. I have made a few minor adjustments of my own.

Ingredients
  • 1 unbaked 9" pie shell
  • 4 eggs
  • 1 teaspoon salt
  • 1/2 cup chopped onion
  • 1 teaspoon red chile powder
  • 1 teaspoon black pepper
  • 1 cup chopped green chile
  • 2 cups heavy cream or 1 cup evaporated milk or 1 cup half & half
  • 1 cup shredded swiss cheese
  • 1/2 cup crumbled cooked bacon

Directions
  1. Separate eggs and beat egg yolks.
  2. Whip egg whites until thick and foamy.
  3. Fold egg whites into yokes along with salt, onions, red chile powder, black pepper and green chile.
  4. Add cream or evaporated milk to mixture and blend well.
  5. Layer swiss cheese over bottom of pie crust and then pour egg mixture into pie crust.
  6. Sprinkle crumbled bacon over top.
  7. Bake at 425 degrees for 25-30 minutes or until browned and solid.
  8. Serve hot.
