How to make it

  • Separate eggs and beat egg yolks.
  • Whip egg whites until thick and foamy.
  • Fold egg whites into yokes along with salt, onions, red chile powder, black pepper and green chile.
  • Add cream or evaporated milk to mixture and blend well.
  • Layer swiss cheese over bottom of pie crust and then pour egg mixture into pie crust.
  • Sprinkle crumbled bacon over top.
  • Bake at 425 degrees for 25-30 minutes or until browned and solid.
  • Serve hot.
