Crispy Beef Lettuce Wraps Recipe
This one comes from an estate sale in Quinlan, Texas. It is also tried and true. I love this recipe and often serve it as a main course with soup or as an appetizer. Everyone seems to love these, they always go very fast.

Ingredients
  • 8 ounce can crushed pineapple in juice drained
  • 1/3 cup orange marmalade
  • 1/4 cup soy sauce
  • 1 pound ground beef
  • 1/3 cup sliced green onions
  • 1 teaspoon freshly ground pepper
  • 8 large lettuce leaves
  • 3/4 cup sliced water chestnuts
  • 3/4 cup shredded carrots

Directions
  1. Combine pineapple, orange marmalade and 2 tablespoons soy sauce in small bowl.
  2. Set aside.
  3. Cook ground beef stirring occasionally to break meat into small crumbles for 10 minutes.
  4. Pour off drippings if necessary then add green onions and remaining soy sauce.
  5. Season with pepper then cook stirring for 1 minute.
  6. Evenly spoon beef mixture onto each lettuce leaf.
  7. Top with equal amounts of water chestnuts and carrots then spoon sauce over top.
  8. Wrap lettuce around filling and serve with remaining sauce.
