A quick salmon dishes with italian Tagliatelle to melt bitter lemon and juicy fish. Goes as a standalone for a brunch, a perfect second dish or after rich appetizers.

Ingredients
  • Salmon fillets (300/400gr total)
  • 1 coffee spoon of lemon pepper (McCormick)
  • 1 lemon juice
  • 1 lemon
  • 2 coofee spoons of oil
  • 1,5dl of white wine (better not sparkling)
  • 1/2 cup of cream (either fat cream or light)
  • 100g Tagliatelle
  • salt

Directions
  1. Cook tagliatelle as your teaste, I suggest well done.
  2. In the meanwhile dress your salmon with half of the lemon juice and let it find its taste for a minute or so. Then fry for 3-4 minutes each side at medium temperature.
  3. Extend the salmon pool juice with white wine and the rest of lemon juice, cook in a very low temperature for a minute.
  4. Add the cream, slowly, and overheat it for a very short moment, then drop salt and lemon pepper as you like.
  5. Cut the salmon fillets in two, pour the sauce and serve with tagliatelle.
  6. Serve with a cool white wine such as Fendant du Valais or Cavicchioli.

Alterations


Instead of Cream, you can use a vinegrette made with not-so-hot mustard. It doesn't need to be cooked and adds a freshy taste.

And, instead of tagliatelle, hot boiled Basmati rice is a perfect companion.


I'm not sure what "Tagliatelle" is...Any alteration suggestions?
