THE Burrito Recipe
Vegetarian burritos that we usually always have on hand. I typically double the recipe, cook them all, individually wrap them and toss in the freezer. Six minutes in the microwave and dinner is ready!

Ingredients
  • 1 large red onion, chopped
  • 4 cloves garlic, chopped
  • 4 Tbs chili powder
  • 3 tsp cumin
  • 4 tsp yellow mustard
  • 1 Tbs soy sauce
  • 3 cans red kidney beans, drained
  • 1/2 cup water
  • 3 - 4 yams, cooked and mashed, skins removed
  • 1 cup shredded sharp cheese (optional)
  • 1 cup spicy salsa
  • 12 - 16 soft tortillas

Directions
  1. Oven to 350 degrees
  2. Cook up onions and garlic with some oil in a pot until translucent
  3. Add spices, mustard and soy sauce and stir
  4. Add in beans, give it a good mix then mash away!
  5. You will want to slowly add the water until desired consistency is reached
  6. Remove from heat
  7. Spoon beans and slightly less yams down each tortilla
  8. Add cheese and salsa if desired
  9. Fold up and bake until golden on top (12 - 15 min)
