wonderfully rich ice cream. I think I originally got it from Paula Deen's show-she does love her butter! It was a big hit at the church ice cream social

Ingredients
  • 2 sticks unsalted butter
  • 1 1/3 c chopped pecans
  • 2 (13-ounce) cans evaporated milk
  • 2 (3 3/4-ounce) packages instant French vanilla pudding mix
  • 2 c sugar
  • 2 t vanilla extract
  • 6 c whole milk

Directions
  1. Melt the butter in a small saucepan.
  2. Cook the pecans over low heat until they are lightly browned, about 3 minutes.
  3. Place on a paper towel to drain and cool.
  4. In large bowl, combine the remaining ingredients.
  5. Whisk until the sugar is dissolved.
  6. Chill for 1 hour.
  7. Pour the mixture into an ice cream maker and freeze according to manufacturers' instructions.
  8. Add the pecans 10 minutes into the freezing.
  9. (Makes 4 qt)
