How to make it

  • Heat a heavy pot on the stove.
  • Add bacon fat or butter. (bacon fat is better!)
  • brown the chicken and onions lightly
  • throw in the vegetables and bring them up to temperature
  • deglaze with brandy and then chicken broth
  • sprinkle in some salt and pepper to taste
  • Add a favorite herb if you'd like
  • bake in 350 deg oven for 40 - 60 minutes depending on size of chicken.
