Fifteen Moroccan Dates Cake Recipe
A sweet, fruited cake with it's roots in Morocco, lightened to meet Western waistlines.

Ingredients
  • 15 Medjool dates (about ¾ lb.)
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 3 eggs, separated
  • ¼ cup apple butter
  • ¼ cup olive oil
  • ¾ cup honey
  • 1 cup almond flour
  • 2/3 cup soy flour
  • 1 teaspoon baking soda

Directions
  1. Preheat oven to 325F.
  2. Pit and chop dates finely. Place in a small bowl, sprinkle with baking soda and add boiling water.
  3. Mix well and stir occasionally while cooling to room temperature.
  4. The mixture will become thick and soft.
  5. Beat egg whites until stiff. Set aside.
  6. Beat apple butter, oil and honey together. Add egg yolks and beat well.
  7. Add cooled date mixture and blend.
  8. Mix almond flour, soy flour, baking soda and salt together and add, mixing well.
  9. Gently fold in the stiff egg whites.
  10. Put mixture into a greased 9" spring form pan.
  11. Place the pan on a cookie sheet and bake for 60 minutes or until the centre feels just firm to the touch. Cool completely.
